What we say: The Flexible Vegetarian by Jo Pratt is a beautiful book, from the stylish mat finish to the high-quality photography to the deliciously interesting recipes. This book appealed to me as a vegetarian who often cooks for meat-eaters. The ‘Flexible’ suggestion for each dish mean that you can easily cater for guests making different dietary choices. It’s a nice change of mindset starting from the vegetarian dish and then adding rather than the opposite of starting from a meat-based dish and removing.

The layout of the recipes makes them easy to follow. Some of my favourite recipes are the Braised lentils and cauliflower steaks (page 125), the Malaysian squash and courgette rending with red lentils (page 129) and the Korean Fried rice with simple kimichi (page137).


Overall, a stylish addition to your cookery book collection.
